I actually made this recipe last summer, but I never posted it! So with all of this time to whip up treats during quarantine, wanted to get it out into the world :)
This recipe title is a MOUTHFUL, I know, but there’s too much good stuff packed into these sweet little treats to leave anyone out. And once I managed to fit everyone in except for coconut, it only felt fair to squeeze him in there too!
Chocolate peanut butter is my favorite FAVORITE dessert flavor combo. These little gems are the perfect sweet treat recipe that comes together in one bowl! They’re kind of like a no-bake cookie and also kind of like cookie dough!? You’re just gonna have to try them to see what I mean!
And the best part of this recipe is, you don’t need a food processor or a mixer — you just need a bowl, a hefty wooden spoon, and some elbow grease.
A few things to keep in mind:
You’ll want to store these in the fridge or freezer so they stay fresh. I like to store them in the freezer because they get a little bit more firm that way and the texture is amazing, like frozen cookie dough!
A cookie scooper (this one from OXO is the best) works well to get equally sized energy balls! Warning, the dough is sticky so it will get gunky!
If you don't feel like scooping and rolling (a bit of a time consuming task), you could press these out into a pan, freeze, and cut into squares!
The texture is a little crumbly, but they do end up setting up and holding together! Depending on how drippy your peanut butter is and how much honey you use, you might need to adjust! If it’s too wet, add more almond flour or oats. If it’s too dry, add a splash of water or more applesauce!
No Bake Peanut Butter Coconut Chocolate Chunk Cookie Dough Balls
Ingredients:
4 cups rolled or old fashioned oats
3/4 - 1 cup of crunchy peanut butter (I like Crazy Richard’s, but use your fave!)
1/3 - 1/2 cup of honey
1 cup almond flour or almond meal (you could also use oat flour here - just grind up oats in food processor - but you may have to play with moisture content!)
2 tsp vanilla extract
1/3 cup unsweetened applesauce (one of those little cups!) - may need a little extra if it’s crumbly
a pinch of salt
2/3 cup coconut, lightly toasted (sweetened or unsweetened is fine)
3/4 cup mini chocolate chips or chocolate chunks
water (may need if the mixture seems too dry)
Instructions:
Add all ingredients to a big bowl.
TIP: Remember, you can start with less of anything and you can always add more (so you might want to hold back some of the PB, honey, or almond flour so you can play with the texture!)Mix everything together using a hefty wooden spoon or your hands.

TIP: If you don't have a cookie scooper, just pinch off bite sized pieces, as big as you want them! Warning, the cookie scooper will get super gunked up since the dough is sticky!Pop the tray into the refrigerator or freezer to firm up. Package in an airtight container with a little space in between and with waxed paper in between the layers.
Store in the fridge or freezer and grab one any time you need a sweet treat!
