There are lots of good things going on with this recipe.
One, it utilizes pre-cooked sausage (I love the Spicy Italian Chicken Sausage from Trader Joe's) -- so it comes together SUPER fast.
Two, it's one of those recipes that lets you use up WHATEVER veggies you have hanging out in your fridge.
Three, you can easily scale it up or down to feed however many people you need to feed, and/or to make sure you have leftovers for the week!
I posted it on Instagram (@mariamakesstuff) a while back, but here's the whole deal! If you're doing Whole30, make sure you check labels on both the sausage and the mustard.
Quick and Easy Dijon Stir-Fry
Ingredients:
2 chicken sausage links (I like Trader Joe's Spicy Italian)
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
1/2 cup onion, thinly sliced
1 cup zucchini, cut into 1/4 inch half moons
3 Tbsp Grainy dijon mustard
Instructions:
HEAT a drizzle of olive oil in a large skillet over medium-high.
SLICE chicken sausage into coins and add to the skillet.
CHOP peppers, onion, and zucchini, then add them to the skillet along with the sausage.
SAUTE until veggies reach crisp tender, then add mustard to the skillet.
SEASON with salt and pepper to taste.
COOK until heated through, then remove from heat and enjoy!
Notes:
- Add whatever veggies you have on hand
- Check labels on mustard and sausage (for Whole30)
